
1 ¾ cups flour
2 tsp baking powder
1 tbsp sugar
½ tsp salt
3 eggs - divided
1 ¾ cups milk
½ cup vegetable oil

Separate the egg whites from the yolks in a large mixing bowl, putting the yolks in another mixing bowl. Beat the egg white & sugar until stiff peaks form.

In the second mixing bowl, that should already contain the egg yolks, add the milk & combine with a hand whisk.

Next, add the rest of the ingredients. Flour, baking powder, salt, & oil. Stir all together to mix well.

Gently fold the beaten egg white mix with the yolk mixture, do not over mix. Just fold thru out to incorporate -- this is what makes the waffles light & fluffy!

Spray your already hot waffle iron with a non-stick spray. Pour a good sized ladle into the center of the waffle iron, close & repeat. So light & fluffy!
