 2 ⅓ cups all-purpose flour
 2 tsp baking powder
 ½ tsp salt
 2 cups granulated sugar
 ¾ cup vegetable oil
 1 cup unsweetened cocoa powder
 4 l large eggs
 2 tsp vanilla extract
 ¾ cup powdered sugar

1

Blend together with an electric mixer, granulated sugar and oil.

2

Mix in the cocoa powder and blend well. Beat in eggs and vanilla.

3

Add in flour, baking powder and salt and mix until blended. Cover dough and refrigerate overnight or freeze for 45 minutes, but not necessary.

4

When ready to bake preheat the oven to 350 degrees. Line your baking sheets with parchment paper or silicone liners.

5

Place powdered sugar in a small mixing bowl. Working with small batches of the dough, scoop dough out and shape into balls about 1" each. Roll in the powdered sugar and then place on the parchment paper covered pans, spacing them 2" apart. (room to spread)

6

Bake in the already heated oven 10-13 minutes until nearly set - they should be soft when touched and should appear slightly under baked.

7

Cool on baking sheet several minutes then transfer to a wire rack to cool. Store cookies in a airtight container once they are nearly cool. Repeat process with remaining dough.
