Hot Fudge Pudding Cake

This recipe has no eggs.
Could be easily modified with gluten free flour.

Be sure to have some ice cream on hand - this tastes like a 'Lava Cake'.

 1 ¼ cups Sugar, divided
 1 cup Flour
 6 tbsp Cocoa, divided
 2 tsp Baking powder
 ¼ tsp Salt
 ½ cup Milk
  cup Butter (melted)
 1 ½ tsp Vanilla
 ½ cup Brown sugar
 1 ¼ cups Hot water

Spray a square baking pan with non-stick spray. Set oven temperature to 350"
Stir together 3/4 cups sugar, all the flour, 3 tablespoons cocoa, all the baking powder, and salt.
Stir in the milk, melted butter, and vanilla. Spread this mixture into the greased baking pan.

Mix the remaining dry ingredients. 1/2 cup sugar, all the brown sugar, and 3 tablespoons cocoa. Sprinkle evenly over the batter.

Pour the hot water over the top and DO NOT MIX.

Bake at 350* for 35 minutes.
This will be jiggly when removing from the oven. The fudgy pudding layer is on the bottom. Remove from the oven & allow to sit for 10 minutes before scooping.
