2 lbs Baby Potatoes(sliced thinly)
2 cups whipping cream
1 tsp diced garlic cloves
1.50 tsp Salt
0.25 tsp ground pepper
0.25 tsp chopped parsley
0.50 cup grated Parmesan cheese
1 cup shredded colby jack cheese

Slice potatoes thinly & spoon into a lightly greased casserole dish.

Mix all the other ingredients together - saving 1/2 cup of shredded cheese for the top.
Pour over the sliced potatoes & toss to coat.
Top with the saved 1/2 cup of shredded cheese.

Bake at 400* for 25 to 30 minutes or until bubbly and golden brown. Remove to a wire rack, and let stand 10 minutes before serving.
